Coconut Delicata Squash Chips
so simple, so satisfying
3 delicata squash, halved, seeded, and cut into thin half rounds
3 tablespoons melted coconut oil
1 teaspoon sea salt
Preheat oven to 400 degrees. Line two baking sheets with parchment paper and set aside.
In a mixing bowl, toss the squash with the melted coconut oil and sea salt until well coated. Transfer to baking sheets and bake for 45 minutes – 1 hour, turning every 10-15 minutes, until the squash is crisp and caramelized.
